Refreshingly tart is the best way to describe this homemade cocktail. You get amazing flavor from the fresh Mint and raspberries. A mint mojito is a classic Cuban cocktail made with mint lime and white rum. Adding some fresh fruit like this Raspberry Mint Mojito brings it to the next level.

I really love to serve drinks in mason jars. It just a nice sized glass that is easy to hold and easy to drink from. Some will call it rustic but there is a reason people have been drinking from mason jars for a long long while. Also.. hard not to mention that they are pretty durable as well.
Suggestions for Sides:
The sweet tartness of this cocktail goes really well with an entree salad with lots of peppery arugula and some goat cheese. I would also suggest some grilled Shrimps or grilled chicken breast.
Tools that may make this recipe easier:
You are going to want to add a true cocktail muddler to your kitchen drawer if you are going to be making cocktails and even mocktails at home. I like one that had a textured edge on one end (like a meat tenderizer) and a smooth end. This allows you to be morr aggressive or gentle depending on what you need.

Raspberry Mint Mojito
Ingredients
- 1 part White Sugar ounce or cup
- 1 part Lime Juice ounce or cup
- 1 part Fresh Raspberry 5 raspberry per serving
- 2 part Club Soda ounce or cup
- 2 part White Rum ounce or cup
- 1 Fresh Mint individual leaves
- Ice
Instructions
- This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
- In a mixer glass combine sugar, lime juice, rum and raspberries. Use a muddle or large spoon handle to crush and combine until it is a jam like consistency.
- Over ice add two leaves of mint and pour raspberry mixture over top. Top up glass with club soda and garnish with two more leaves of mint.
