Corn has always been one of my favorite vegetables. I know it is not the most nutrient dense of the vegetables but it was one of the most versatile, making it great as an add on or even filler to many dishes. I recently discovered the trendy concept of corn ribs and I’m in love, I tell you. They are so fun to eat, so easy to make and really add something to a proper BBQ Platter. These easy Oven Baked Corn Ribs are something you can make all year around to get that feel of summer!

I have included my own recipe for a pork spice rub to use as the seasoning for these corn ribs. If you have a special recipe you like or a particular bottled variety you always grab for – that will work too. You can also branch out and try different flavor profiles to go with whatever the rest of the meal might be. I really like the Woodfire Garlic Mix from Kinder. You can also use something as simple as Old Bay or Nature’s Seasonings.

Substitutes and Variations:

I like to use a sweet white corn variety, but you can use whatever is available to you. If it is the off-season, you can totally use frozen corn cobs or cobbettes. Just let them thaw slightly, so that they are easier to cut up.

Suggestions for Sides:

This is the perfect side for any BBQ Platter – you can have it along side your pulled pork, pork ribs, burgers, roasted chicken, grilled steaks, lamb chops – pretty much anything you make on a grill or smoker would work out. You can also make them to go with a some mac & cheese with ham for a quick weeknight meal.

Oven Baked Corn Ribs

You will definitely need a sharp chef’s knife for this recipe. Cutting and quartering the corn cobs is the essential piece of this recipe. Make sure you knife is freshly sharpened so that you can easily cut through the hard cobs. If your knife is dull, you will risk hurting yourself by sending the cob flying and your knife flailing. You will also want to use a large baking sheet covered in parchment to minimize clean up.

Oven Baked Corn Ribs

A new way to enjoy corn on the cob all year around – with the delicious seasoning of rib and an easy way to eat it!

Ingredients

  • 6 large Whole Corn husks removed
  • ½ cup Oil
  • ½ cup Pork Spice Rub see recipe below
  • 1 tbsp Dried Parsley

Instructions

  • Preheat oven to 450degF.
  • Cut each cob in half. Then stand each half of end and cut into spears by quartering each round. You should 48 spears or ribs in the end.
  • Add all ribs to a bowl and pour oil and seasoning into bowl. Toss and stir to evenly coat each rib.
  • Spread seasoned corn ribs onto a parchment paper covered baking sheet. Place in oven for 45 minutes.

Pork Spice Rub

A simple but super flavorful rub recipe that is mostly geared for use on grilled or smoked pork

Ingredients

  • ¼ cup Brown Sugar
  • 3 tbsp Onion Powder
  • 3 tbsp Garlic Powder
  • 2 tbsp Paprika
  • 2 tbsp Salt
  • 1 tbsp White Pepper

Instructions

  • Combine all ingredients in a bowl or jar. Use right away or store in an airtight container.
