Sometimes you just need a fun cocktail to break up the humdrum or monotonous week after week working and working. Maybe you need a different drink to serve this next Cinco de Mayo. If you like ginger, lime and a little tequila then you are going to love this Easy Mexican Mule. It is a play on the traditional Moscow Mule that is made with vodka and often served in a copper mug.

As you can see I really like to use a mason jar for a cocktail cup. I know it might not be especially fancy, but it’s functional. I like that they stay cold a little longer because the glass tends to be thicker than many drinking glasses. They are also just handy for me, as an avid canner, we always have jars around in all shapes and sizes. So some might call it rustic – I call it practical. I most typically use 16 ounce wide mouth mason jars for drinking. They are the closest thing to a regular drinking cup.

Substitutes and Variations:

If you want to make this as a mocktail you can omit the tequila and use ginger ale in place of the ginger beer. While ginger beer has very little alcohol content (usually around 0.5%), you can still swap it out if you need.

Suggestions for Sides:

While you can obviously have a beverage without a meal, this is a fun cocktail to pair with a Mexican themed-meal. Whether it be a Cinco de Mayo party or just Taco Tuesday – you are going to love the flavors of lime and tequila with the classic Mexican food flavors of cumin and chiles!

Tools that may make this recipe easier:

The only real tools needed to make this cocktail are a knife for cutting the lime and a shot glass for measuring out the lime juice and tequila. If you want to get a little extra with the shaped ice – I do love the extra large ice cubes or ice balls. You can find all sorts of molds for them online and in the stores. I will say that the silicone ones are the best, but find one that has some structure to it so that it’s not so difficult to put in the freezer when it’s just full of water.

A refreshing combination of ginger and lime in an iced tequila cocktail.

Ingredients

  • 1 part Agave Syrup ounce or cup
  • 1 part Lime Juice ounce or cup
  • 4 part Ginger Beer ounce or cup
  • 2 part Tequila ounce or cup
  • 1 Fresh Lime cut in wedges
  • Ice

Instructions

  • This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
  • In a mixer glass combine agave syrup, lime juice, tequila and ginger beer.
  • Pour over ice and garnish with a lime wedge.
