What’s been going on at Homemade on a Weeknight?

What a week we had last week. In an effort to get this transition to another state underway, my daughter and I embarked on our first road trip with just the two of us. We drove over 2000 miles in about 40 hours to drop off a trailer to a storage unit near where we are planning to move to! We made it almost the whole 1000 miles to get there without a hitch – until one of the tires on the trailer completely exploded! It was a miracle that it happened in a straightaway NOT in the middle of nowhere. We were able to get help from my family that was waiting for us at the end of the line as well as some amazing help from some strangers that happened to live on the property we pulled over in front of. All in all – it was a stressful but powerful experience. It was a great reminder to my daughter that we CAN in fact take care of ourselves. It is going to be and interesting cross country transition for us all but I am so excited for it!

What have you been up to this past week?

This last week’s most popular recipe was: Smoked Sausage & Mozzarella Pasta

  1. Glad you had lots of help with the tire blowout! That sounds like an exciting move… my parents are looking to do something very similar moving from CT to North Carolina; they’re hoping to spend the long labor day weekend and use a U-Haul to get their stuff down there and in a storage unit near to where they eventually want to move.

  2. Many thanks for the awesome feature for my Grilled Lemon Garlic Flank Steak, I really appreciate it! It looks like a great party today and thank so much for sharing it with all of us!
