What’s been going on at Homemade on a Weeknight?
Over the last week our latest batch of chickens had matured enough to declare the week “Dispatch Week”. This is an endeavor we have embarked on roughly 3 times a year for the last 3 years. We raise between 30 and 50 meat chickens from chicks to around 12 weeks old. Basically when the males start Cock-a-doodle-do-ing it’s time to start dispatching them. We sort out the largest birds first, since we can only do 10-15 of them per day. Between my husband and I, we are able to dispatch, pluck and rough butcher (this means removing the whole legs, whole wings and breasts from each bird) 15 birds in about 3 hours. It then takes another hour or so to break down the legs and wings and do a final clean up on the breasts and then portion them out into bags and wrap in butcher paper for the freezer. It is a laborious but rewarding process that results in some of the most delicious chicken I have ever had. Below you can see what 15 butchered birds looks like.

So many yummy features! It sounds like you and your husband have been very busy but I bet all that fresh chicken tastes great.
