What’s been going on at Homemade on a Weeknight?
You all probably know by now that I raise chickens (for both eggs and meat) as well as ducks. Some people ask me why we do both types of fowl for egg production, and the simple answer is because love both of them. There are subtle differences between the two types of eggs. As you can see from the photo – the duck eggs have much larger yolks as compared to the chicken eggs. But the amount of egg white is relatively the same amount. In terms of nutritional value, duck eggs have roughly 50% more vitamin A, they have significantly higher amounts of protein than chicken eggs as well as antioxidants and omega-3 fatty acids. When you get to flavor, its really about preference. A duck egg is much more rich in flavor and they result in a creamier texture. All that said – chicken eggs are still very good for you and great in flavor. Either way – both are so much more flavorful when they come Farm Fresh!
