What’s been going on at Homemade on a Weeknight?

I hope that you are all safe, warm and dry this week. Here in the Pacific Northwest we were hit hard by an ice storm that wrecked havoc on our area. Some have been without power for days (we luckily only lost for a few hours). School was canceled for a week and we were unable to do any construction work between the hazardous conditions and the fact that our local supply house was one without power for many days. We did have some minimal damage to our deck caused by the breaking of branches from our beautiful cedar tree, but we were definitely lucky in all of it. No one was hurt – including our dogs and flock.

This also proved troublesome when it came to food. We were not even able to get out of our driveway for the first three days so, we were limited to items on hand. I also wanted to limit the meals that cooked quickly – in the event that the power went out again. So it was one pot meals, pizza and sandwiches for most of the week.     Hi Estelle, that’s a lot of ice! You were lucky to only lose power for a little while. We almost always have some homemade sauce in the freezer for when we need something quick and easy. It thaws out relatively fast and is always a good choice 🙂
