While it is definitely pretty easy to just buy pre-made breakfast sausage, sometimes you find yourself needing some, and all you have to hand is ground pork. On the other hand, you may want to buy a whole pork loin and grind it up yourself to save money. Or you could have some game meat you want to grind up and make into sausage. Either way – this recipe for Breakfast Sausage Seasoning Blend is one you are going to want to bookmark for use later.

There are lots of blends out there, but I like this one the most. It has an unexpected ingredient in the mix that really makes it special. And that ingredient is – NUTMEG! Yep, toss in a little nutmeg, and you will get that little something something you may have been missing when you tried to make breakfast sausage before.
Substitutes and Variations:
This can be useful to turn just about any type of ground meat into breakfast sausage. If you want to go with a poultry open like chicken or turkey (or wild turkey), just be sure to add a little fat to the pan when you fry it up. You can use it for mutton, venison, goat – lots of the game meats.
Suggestions for Sides:
This is great to season up your meat for sausage gravy for Biscuits & Gravy, sausage patties for breakfast sandwiches or sausage crumbles for breakfast burritos or skillets.
Tools that may make this recipe easier:
I like to use small half pint mason jars to mix up smaller blends like this. If you are going to make a large batch or use it frequently, you could use a larger jar. But keep in mind that the brown sugar will clump with the moisture in the air, so break it up if you see clumping.

Breakfast Sausage Seasoning Blend
Ingredients
- 2 tsp Garlic Powder
- 2 Tsp Onion Powder
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 1 Tsp Tarragon
- 1 Tsp Red Pepper Flakes
- 1 Tsp Thyme
- ½ Tsp Nutmeg
- ½ Tbsp Brown Sugar
Instructions
- Add all ingredients to a half pint mason jar. Secure the lid and shake until fully combined.
- This will seasoning 2-3 pounds of ground meat depending on how strong you want it.
