Peanut Butter cookie might be one of my own personal favorite cookies. I don’t make them often most, because they happen to be a top of the list cookie for most of the family, so I don’t get many even when I make them. Since we are in the camper full time now, my baking adventures has slowed but not stopped. My amazing husband found a way to convert the tiny camper oven to a full sized wall oven that will hold an entire baking sheet. So I am bake at it with the baking of my sourdough bread, which also means I have sourdough discard to play with. And this is how I came to bake these Sourdough Peanut Butter cookies, and now you can too!

This recipe does require you to have your own sourdough starter. While I do care for and keep my own starter, I’m not including a recipe for that here, as I did not start mine on my own. There are lots of recipe out there, as well as people that you can purchase sourdough starter that is already going. No matter where you get your starter or how you maintain it, this recipe does call for discard. Discard is simply a name for starter that doesn’t become sourdough bread. I suggest that you use starter that has been fed within the last 12 hours.
When it comes to the peanut butter you can use whatever your favorite variety is. If you like to have chunks of peanut – then use chunky peanut butter. If you want all natural peanut butter – then use that, as long as it’s completely mixed. All that said, a cup and a half of peanut butter, is most of a jar – so make sure that whatever you are using, you have enough of.
Most peanut butter recipes list in the instructions to portion the dough into small balls with your hands and the roll them out before pressing with a fork. By using a 2 tablespoon food scoop, you can scoop directly onto the baking sheet and then use the fork to press the crosshatch into the top. It makes it much faster and easier. Whenever making cookies, I prefer to use a food scoop. This makes sure that each cookie is essentially the same size, which ensures that they will bake at the same rate.

Sourdough Peanut Butter Cookies
Ingredients
- 1½ cup Butter softened
- 1 cup Brown Sugar
- ½ cup White Sugar
- 2 Eggs
- 1½ cup Peanut Butter
- 1 cup Sourdough Discard
- 2 tsp Vanilla Extract
- 4 cups Flour
- 2 tsp Salt
- 2 tsp Baking Soda
Instructions
- In a large bowl (or in your mixer), add butter and sugars. Mix until creamed. Then add vanilla, and eggs. Mix until smooth.
- Next add sourdough discard and peanut butter. Thoroughly mix.
- Add salt and baking soda, along with one cup of flour. Continue to mix, adding one cup of flour at a time until fully combined.
- Cover bowl and chill dough for at least one hour. (up to 24hours)
- Preheat oven to 350degF.
- Using a #40 (1 oz or 2 tbsp) scoop to portion out dough onto a parchment paper covered baking sheet. Using the back of a fork, make a crosshatch in the top of each dough scoop, pressing down slightly.
- Place in oven to bake for 15 minutes.
- Immediately remove cookies from the baking sheet to a cooling rack. Repeat with remaining dough.
- Once fully cooled, transfer to airtight container for storage.

Interesting. I would never think to do this. So do they have a sour taste? I don’t care for sourdough bread because of the sour taste. After baking cookies for 40 years, I finally purchased a cookie scoop. It was so nice and easy and it made me wonder why I waited so long. Visiting from SSPS.
The scoop really is a game changer. As for the Sour taste, I don’t particularly think sourdough is all that sour, so I don’t taste it at all in the cookies. I think it just makes them softer. But my one kid that doesn’t care too much for sourdough isn’t the biggest fan of these so there may be something to it
