What’s been going on at Homemade on a Weeknight?

One of my favorite things about cooking is making it pretty. I mean you eat with your eyes first after all, right? I especially love when food can be super colorful and vibrant using lots of fresh veggies. This always becomes easier in the spring and summer months when the gardens are full of delicious fresh produce. While my current garden is not big enough to provide all this goodness, there are big plans in the works to change that! In the meantime I will be happy with what I can find locally. When it comes to prepping fresh veggies, I have two very important tools in my kitchen – my sharp chef’s knife and my hand mandoline. They help me get even cuts every time.
