Instructions
Preheat oven to 400degF.
In a frying pan over medium-high heat, cook and crumble sausage until no longer pink.
Add two tablespoons of oil to the cake pan. Then press the tortilla in to the pan until the bottom is flat and the oil is pressed up the sides of the pan to coat the tortilla.
Pour beaten eggs, half of the cheese and then the sausage into the tortilla. Then sprinkle bell peppers, remaining cheese and remaining oil over the top.
Place in the oven and bake for 30 minutes. Let rest in pan for about 5 minutes, then remove from pan to a cutting board and slice into 6 even pieces.
