Grilled Chicken BLT

A marinated chicken breast, grilled and layered up on a classic BLT

Ingredients
  

  • 6 Ciabatta Rolls
  • 6 leaves Green Leaf Lettuce
  • 1 Large Tomato cut in slices
  • 6 slices Sharp Cheddar
  • 18 slices Thick-cut Bacon
  • 1 cup Sandwich Spread see recipe below

For the Chicken

  • 6 Chicken Breasts
  • 1 cup Chicken Broth
  • ¼ cup Lemon Juice
  • ½ cup Oil
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • Add chicken ingredients to a gallon zipper bag. Seal and place in refrigerator to marinate for at least 4 hours (up to 24hours).
  • Preheat Oven to 400degF. Preheat Grill to medium high heat.
  • Line a large baking sheet with parchment paper. Lay bacon in a single flat layer. Place wired baking rack over top (this prevents it from curling up). Place in oven for 20 minutes. Remove from oven and transfer to paper towel covered plate.
  • Remove chicken from marinade (discard marinating liquid). Place on grill and cook for 8-10 minutes on each side. Once thickest part of breast reaches 165degF. Remove to platter and top each with slice of cheese and let rest 5 minutes.
  • Spread each side of ciabatta bread with sandwich spread. Add lettuce, two slices of tomato, and three strips of bacon. Top with grilled chicken and top bun. Use two long toothpicks to secure each side and slice in half to serve.
