Ginger Chicken Noodle Soup

Ingredients
  

  • 1 Medium White Onion diced
  • 2 Red Bell Peppers cored and diced
  • 3 Medium Carrots diced
  • 3 Celery Stalks diced
  • 4 Garlic Cloves minced
  • 1 tbsp Fresh Ginger grated
  • 4 Large Chicken Breasts diced
  • ¼ cup Lime Juice
  • ½ cup Rice Vinegar
  • 2 tbsp White Miso
  • ½ cup Soy Sauce
  • 2 qt Chicken Broth
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 lb Rice Noodles
  • ½ cup Cilantro coarsely chopped

Instructions
 

  • Add onion, bell pepper, carrots, celery, garlic, ginger, chicken, broth, miso, lime juice, rice vinegar, soy sauce, salt and pepper to a large pot over medium heat. Let cook at a slight boil for 45 minutes.
  • Add rice noodles to pot and let cook another 15 minutes, stirring occassionally.
  • Serve with a sprinkle of cilanto.
