Black Currant Hoisin Chicken

Delicious roasted chicken with black currant and hoisin glaze

Ingredients
  

  • 6 Chicken Drumsticks
  • 6 Chicken Thighs bone-in
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 4 Green Onions chopped

For the Black Currant Hoisin Sauce

  • 1 cup Black Currant Jam
  • cup Hoisin Sauce
  • 4 Garlic Cloves minced
  • ¼ cup Rice Wine Vinegar
  • ½ cup Chicken Broth
  • 1 tsp Onion Powder

Instructions
 

  • Preheat oven to 400degF.
  • Combine salt, pepper and garlic powder. Sprinkle over chicken (both sides). Place chicken on a wire baking rack over a parchment paper covered baking sheet. Place in oven for 45 minutes.
  • In a sauce pan over medium high heat, add all sauce ingredients. Stir to combine. Bring just to a bubble and reduce heat to medium low to simmer while chicken cooks.
  • Remove chicken from stove. Increase temperature to 450degF. Spoon sauce over top of chicken. Return to oven for 10 minutes. Serve with sprinkle of green onions and extra sauce for dipping.
