A light bright crunchy summer salad - you are going to love!
- 2 Zucchini cut into 1-inch pieces
- 2 Carrots cut into 1-inch pieces
- ½ Red Onion Diced
- 2 tbsp Fresh Chives chopped
For the Vinaigrette
- ½ cup Avocado Oil
- ½ cup Red Wine Vinegar
- ¼ cup Lemon Juice
- 1 tsp Garlic Powder
- 1 tsp Dill
- 1 tsp Red Pepper Flakes
- 1 tsp Salt
- 1 tsp Pepper
Prepare all of the ingredients.
Add veggies to a large bowl.
Combine sauce ingredients in a smaller bowl then pour over veggies. Toss to coat.
Cover at place in refrigerator for at least 1 hour (up to 3 days)
