Healthier Fare

We all need to make sure to add some Healthier Fare on our weekly menu – but that does not mean they have to boring!

Baked Shrimp “Boil”

This dish is so much fun to eat and so easy to put together. Everything is cooked on sheet pan and there is minimal prep involved. Really it is the combination of spices – especially the Paprika and Thyme that gives so much power to the flavor punch. And being able to just put everything on a pan and walkaway while its bakes is a huge part of Homemade on a Weeknight’s success.

Philly Cheese Steak Stuffed Peppers

Stuffed Bell Peppers always look like you put so much effort into them – when really its just about layering. I like to cut the peppers lengthwise, so I have a wider base to fill up with the yummy goodness of Provolone, Mushrooms, and Beef. These are delicious with a side of sweet potato fries or Pasta Salad.

Honey Mustard Chicken

Simple and Delicious are the best words to describe this dish – and it really is all in the marinade. An easy baked chicken breast will almost always win dinnertime – and the honey and yellow mustard marinade will bring it to life. If you end up with any chicken leftover – it makes for a great salad the next day!

Spicy Garlic Parmesan Wings

How do you make Chicken Wings healthier? Well you bake them of course! Then you top them with a simple butter garlic and parmesan sauce that have so much flavor. You can also use this cooking technique to make  variety of other flavors by changing up what you mix in with the better.

Green Chili Chicken Lasagna                         

This dish is a little more involved than some of the other Homemade on a Weeknight recipes – but it is so very worth it. The Salsa Verde sauce is so yummy and a perfect complement to the chicken and green chilies. By using Greek yogurt mixed with ricotta cheese, you still get the flavors you want in a lasagna but with a healthier twist.

Egg & Corn Salad Wraps     

Eggs are an amazing source of protein that often gets overlooked. And eggs are not just for breakfast. This tasty combination of eggs, cucumber, corn, and Greek yogurt will know your socks off. These wraps are great for a dinner on the go – like a trip to the lake on a weeknight. And IF you have you any leftovers, it will still be yummy for lunch the next day!

This is so far from what most people think of when you say “Chicken Salad” – mostly because it is not drowned in Mayo and it has Sweet Peppers in it to add even more crunch. This can be made ahead of time or served right when you complete it. To make the dish really tasty – do not forget to the toast up the bread.

If you have not experience a Chaffle yet – you have been seriously missing out. What is a Chaffle?
