I don’t always Keto but when I do – I want it to taste amazing and not like I’m on a diet or depriving myself of anything. And I have to say I pretty much nailed it with this Beefy Keto Casserole. It has a sort of “stroganoff-esque” flavor happening but with so much more. The thing I love so much about Keto is that cheese is almost always on the menu – and this recipe is not lacking in the cheese department at all.
Some might say you need to “rice” your cauliflower – I am not one of those people. I like to have a few bigger pieces of cauliflower that have a little bite to it. So I just used my kitchen knife to cut the cauliflower to mostly rice but with a few bigger pieces. But if you wanted to buy riced cauliflower that would work too.
As I have mentioned – my whole family is not keto. So, while I try to keep to it for me, I do not force all of my fam bam to do it. So I did serve this with some Corn Chips (frito-style). It added just enough crunch to make it so extra yummy – think Frito Pie! But believe me when I say it does not need it at all. The casserole on it’s own is just plain and simple – bomb diggity!
